BUTTERNUT SQUASH ZOODLE EGG BASKET


Growing up an 'egg-in-a-hole' was one of my favorite breakfasts. For those of you not familiar with this deliciousness, it involves cutting a hole in a slice of bread, putting it in a pan, cracking an egg into the bread hole, and then frying the bread and egg together. Let me tell you, it is amazing. This zoodle egg basket recipe is a bit of a healthy revamp on the original 'egg-in-a-hole'. The butternut squash zoodles replace the bread making this version gluten and grain free. You could also mix in any type of zoodles like sweet potato or zucchini.

Ingredients:

  • 1/2 Butternut Squash (you could also use store-bought spiralized noodles)

  • 2 eggs

  • 1 Tbsp Avocado Oil

  • Red Pepper Flakes

  • Salt & Pepper

Directions:

  • Trim the top off the butternut squash and peel the skin off

  • Using your spiralizer, spiralize your squash to desired noodle size

  • Heat a frying pan with 1 tbsp avocado oil and add butternut squash noodles

  • Cook squash noodles for 3-5 minutes or until soft and season with salt + pepper

  • Form the noodles into a nest and pour the egg white from one of the eggs over the noodle nest.

  • Crack the second egg into the middle of the nest and cook egg to desired consistency

  • Season with red pepper flakes and enjoy!
