Growing up an 'egg-in-a-hole' was one of my favorite breakfasts. For those of you not familiar with this deliciousness, it involves cutting a hole in a slice of bread, putting it in a pan, cracking an egg into the bread hole, and then frying the bread and egg together. Let me tell you, it is amazing. This zoodle egg basket recipe is a bit of a healthy revamp on the original 'egg-in-a-hole'. The butternut squash zoodles replace the bread making this version gluten and grain free. You could also mix in any type of zoodles like sweet potato or zucchini.
Ingredients:
1/2 Butternut Squash (you could also use store-bought spiralized noodles)
2 eggs
1 Tbsp Avocado Oil
Red Pepper Flakes
Salt & Pepper
Directions:
Trim the top off the butternut squash and peel the skin off
Using your spiralizer, spiralize your squash to desired noodle size
Heat a frying pan with 1 tbsp avocado oil and add butternut squash noodles
Cook squash noodles for 3-5 minutes or until soft and season with salt + pepper
Form the noodles into a nest and pour the egg white from one of the eggs over the noodle nest.
Crack the second egg into the middle of the nest and cook egg to desired consistency
Season with red pepper flakes and enjoy!
