But honestly, is there any better combo than peanut butter and chocolate? If you agree, it's impossible not to love these Peanut Butter Chocolate Chip freezer balls. These require no baking (so easy) but still have such a dough-y, cookie-like texture. I've been sharing these with lots of friends lately because they are such a crowd-pleaser. One ball is only around 140 calories but still so filling and satisfying thanks to the healthy fat from the peanut butter and coconut butter. They also happen to be gluten- and dairy-free, vegan & paleo if that's your thing. I always have a batch in my freezer for breakfast, snack or dessert. Enjoy!
Ingredients
*Makes 8-9 balls *1 ball = ~140 cals
2 T peanut Butter (I likeMaraNatha & Georgia Grinders PB but you can substitute with any nut butter)
3 T coconut butter (I like Eating Evolved, Thrive Market or Artisana Brand)
1 T vanilla extract
2 T organic maple syrup
3/4 cup almond flour (Depending on how oil-y your peanut butter is, you may need more or less almond flour. The dough should be slightly crumbly and when you squeeze it into balls, they should stick. I recommend starting with 3/4 cup of almond flour and increasing up to 1 cup if they are too oil-y and not sticking)
1/4 tsp salt
2 T dark chocolate chips
1 T cacao nibs (I like Navitas Organics)
Directions
Melt peanut butter and coconut butter and mix with vanilla extract and maple syrup.
Mix in salt and slowly add almond flour.
Stir in the chocolate chips and cacao nibs.
Roll into balls and place on parchment paper in freezer for at least 15 minutes before eating. Enjoy!
