With under 5 ingredients, this cucumber salad could not be easier and it's low-cal, paleo and vegan. The cucumbers and onion add a nice crunch and the dressy is sweet and tangy. This recipe makes for a great side salad and it also keeps for a day or two, so it's perfect for lunch the next day!


  • 1 cucumber, thinly sliced

  • 1/2 white onion sliced or chopped (red onion would also work)

  • 1 tablespoon rice vinegar

  • 1 teaspoon soy sauce

  • Salt & Pepper to taste

  • Red Pepper Flakes to taste


  • Place cucumber and onion in a bowl

  • Whisk together vinegar and soy sauce and mix into bowl with cucumber and onion

  • Season with salt, pepper and red pepper flakes

  • Serve cool
