Freezer balls, fat balls, protein balls, energy balls, whatever you want to call them, they are delicious. I've been playing around with different combinations and flavors and have finally perfected the recipe with these maple pecan freezer balls. They are one of the most delicious things I've ever made and taste just like pecan pie but without the sugar overload. I love making freezer balls and keeping them in my fridge for a quick breakfast, snack or treat. They're such a handy snack that is extremely satisfying and SO easy to eat on-the-go. You can also enjoy them slowly and savor each bite like I did this morning with my almond milk latte - it was heavenly. The best part about these balls is that they have a ton of flavor but are low sugar and carb so they won't spike your blood sugar and induce any sugar cravings. They're also easy to make and don't require an oven. Also, if you don't have a food processor, don't worry - I used a magic bullet and it was able to chop and blend the nuts. I hope you love this recipe as much as I do!


*Makes about 9 balls, 181 calories each

  • 1 T maple syrup

  • 3/4 cup raw pecans (feel free to sub in your favorite nut)

  • 1/2 cup coconut shreds

  • 2.5 T almond butter

  • 1 scoop Vital Proteins Collagen powder

  • 1/4 cup coconut butter

  • 1/2 teaspoon vanilla

  • 1/2 tsp cinnamon

  • 1/8 tsp salt

  • 1/8 tsp nutmeg

  • 1.5 T unsweetened almond milk


1. In a food processor or high-power blender, blend the raw pecans and almond milk. 2. Once blended, add in remaining ingredients and blend until you have a smooth, sticky paste. 3. Roll your nut paste into small balls and freeze for at least 20 minutes before eating. 4. Keep in your freezer and enjoy!
